Pumpkin Protein Bars

*adapted from Jamie Eason’s recipe at bodybuilding.com

1 tbsp Stevia
1 4oz jar of baby food applesauce
2 tsp cinnamon
1 1/2 tsp ground ginger
1/2 tsp ground clove
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp vanilla extract
4 egg whites
1 15oz can raw pumpkin (not pumpkin filling)
2C oat flour
2 scoops vanilla whey protein powder
1/2 cup almond milk

Heat over to 350 degrees
Coat a 9 x 13 dish with cooking spray
Combine first 11 ingredients and mix well
Add the oat flour, almond milk, and protein powder
Spread batter into pan evenly and cook for about 30 minutes

Makes 24 Squares
