Mel’s Veggie Pita

4 whole-wheat pita pockets
1 zucchini
1 yellow pepper
1 sliced tomato
1/4c feta cheese

Directions: slice zucchini and pepper. Saute over med/low heat until just cooked. I seasoned mine with chili powder, cumin, and garlic, but you could use any of your favorite spices.  Toast pita pockets then stuff with sprouts, zucchini and pepper, sliced tomato and feta cheese.  Serves 2.
